So, I made the almond orange gluten free cake on Wednesday. Yesterday I decided to modify the recipe and make it mini loaves instead. This cut calories in several ways- decreased the butter and sugar used in the upside down part of the cake, then also I cut back in the sugar in the cake recipe from 1/2 cup to 1/3 cup. I didn’t really notice any difference, so that’s a good change. I love to eat healthy, but I love to eat GOOD TASTING food even more. I think this is great for people with gluten allergies and intolerances,, but also really good for us who don’t deal with that. You’ll find the recipe from yesterday’s postings for the cake.
