Almond Orange Upside Down Cake

I was so inspired by @fancyplantsfoodie post the other day with a vegan orange cake, I had to try. I looked through several different recipes and kind of combined a few to come up with a recipe I felt like would work. My only irritation with this was after pulling it from the oven, I left it in the pan for too long. It got a little sweaty. I had to run the boys someplace and it took longer than I thought ????, so not quite perfect on this one! Mine was different from Elizabeth’s as it’s a #vegetarian and #glutenfree cake, but it has eggs and honey, so not vegan. It’s made with almond flour instead of your regular all purpose, whole wheat or gluten free. I wasn’t sure what it was going to do to the texture, but was pleasantly surprised at how well it turned out. Here’s how I made my almond orange upside down cake-

Caramel and orange for bottom of cake-
3 tablespoons unsalted butter, plus more for the pan
1/4 cup sugar
3 tablespoons honey
Pinch kosher salt
2 oranges, I used naval

Batter-
11/2 cups almond flour
3 tablespoons orange zest. I used the zest from 1 1/2 Navel oranges used for bottom of the cake.
2 tablespoons cornstarch
1 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
4 tablespoons (1/2 stick) unsalted butter, at room temperature
1/2 cup sugar
4 large eggs, separated
1 teaspoon pure vanilla extract

Preheat oven to 350°. Grease 8 inch pan. I used round, you can use any shape you like. Blend butter, honey, sugar and salt in pan and heat over medium for about 5 to 7 minutes, cooking to a very light caramel. Pour into bottom of pan and set pan aside. Cut off all peel from oranges, and slice into 1/4 inch slices (see photos). Arrange in the bottom of the pan (also see photos). Seperate eggs. Beat egg white to soft peaks, and set aside egg yolks.Mix flour, baking powder, cornstarch and salt in small bowl and set aside. Combine orange zest with 1/2 cup sugar, mix well. Add butter and mix until light. Add yolks and vanilla and mix well. Add flour combination and mix only until combined. Next mix in about 1/3 beaten egg whites. Once Incorporated, fold in remaining 2/3. Pour into prepared pan and bake 35-40. Let cool abt 5 minutes then invert. Enjoy!!
