I have been on a balsamic kick for awhile now, mostly since I discovered white balsamic. There are few days I don't use it in one way or another. This recipe uses a dark balsamic, but you could easily use your favorite white one as well.
Start by heating the olive oil in a pan. Add chopped onions and saute lightly. Next, move them to the side, add in a little more oil and add chicken.
Flip chicken and cook on the other side. Remove from pan and add peaches.
Saute for several minutes and add in minced garlic, honey and balsamic
Let this reduce and cook for several minutes.
It will continue to thicken. Mix occasionally to keep it from burning.
Add in tomatoes and continue to cook. After a few minutes the tomatoes will pop after they are heated enough.
Add back in the chicken and let it cook in the sauces for a few minutes.
Flip until it is coated well, and the chicken has taken on the flavors.
The finished dish is beautiful.
The flavors are amazing together.
It would have been good with a white vinaigrette as well, but in this case I preferred a dark. It gives such a beautiful color.
This dish takes a little time, but it's worth it.

Peach Balsamic Chicken
- 4 chicken breast I realize I only show 2 in my photos, but I am making this recipe for 4.
- 2 tablespoons olive oil
- ¾ cup chopped onion
- ½ cup balsamic vinegar
- 3 cups peach wedges
- 1 cup cherry or grape tomatoes
- 1 tablespoon minced garlic
- salt and pepper to taste
- Heat a heavy bottom pan on medium heat. Make sure it is large enough to hold all the ingredients. Add olive oil to pan. Heat it as well. To the heated oil, add in chopped onions. Saute them for a few minutes. Clear them to the outside of the pan, and add the chicken. Cook chicken for a few minutes on each side. How long you cook it, depends on how big each breast is. Once they are partially cooked, remove from pan. You don't want them to cook all the way, you are adding them back in with the sauces, so don't cook them all the way right now.To the pan add the peaches, garlic and balsamic. Continue to cook on medium heat and reduce the balsamic. As it cooks, it will start to thicken slightly. Let this cook about 5 minutes. Add tomatoes. Let them cook about 3-4 minutes. Add back in the chicken and continue cooking and reducing. As the tomatoes continue to cook, they will burst. This adds flavor to the sauce. Flip the chicken occasionally, completely coating in the sauce. Don't let it over cook though, be mindful of how long it is in there for. Now, sit back and enjoy. You deserve it!
