Beet and Carrot Spinach Salad

I love a good loaded salad. I think there are always good, fun new combos to try out. One combo I have not tried out yet is carrots and beets. Have you tried this yet? No? You should. Here’s the rundown on what I did.

I started with a base of spinach. If you prefer, use another dark leafy green. If dark leafy greens freak you out, you could always use whatever lettuce you prefer.

Add quinoa. I used a tri colored quinoa. I generally use a red, but love this too.

Cut your beets into slices or wedges. I wanted wedges. Whatever type of beets you choose. I had red beets, so that is what I used.

Add them to your salad.

I peeled ribbons with my carrots. You could easily cut your carrots if you prefer…surprise….it tastes the same!! 🙂 The ribbons are so pretty though.

Add them on top. Make sure and curl them. Isn’t it so pretty.

I also threw on some broccoli as well, it just felt right. I topped mine with goat cheese too, but it was after I had photographed.

Top with any dressing you like. I always prefer a vinaigrette for these types of salads. What about you? I topped mine with a fig balsamic. Here is how I made it- 1 tablespoon fig balsamic, 1 tablespoon olive oil, 1 teaspoon dijon mustard, 1/2 teaspoon minced garlic, 1/4 teaspoon salt, 2 teaspoons honey. If you aren’t into this dressing, use another of your choice.
