With the weather warming, I’m really into quick, and healthy salads. I’m using them for meals, snack or even side dished. This is a salad is one I’ve used as an appetizer before. Have ever had a cantaloupe prosciutto skewer? They are so good! The sweetness of the cantaloupe and the saltiness of the prosciutto are the best combo! Yum!

So, I prepped the cantaloupe by scooping with a melon baller. You can cube it of course, but it’s kind of pretty when it’s in balls.
I love Boar’s head, so that’s the brand I used. I wanted the prosciutto to be a little more crispy, so I chopped it and fried it for a few minutes until crispy.
Begin assembling your salad. Add the cantaloupe to bowl, then the prosciutto, and goat cheese. If you aren’t into goat cheese, you can also use feta or fresh mozzarella. I also had some extra blueberries to use, so I threw those in as well.
The only thing I topped this with, was a white balsamic. With the appetizers, I have always used a dark, but the white just felt right this time!
Here it is assembled. It was the hardest dish to get a decent photo of, but tasted so much better than it looks!
