Even though I generally like to plate all the meals in our house, there is also the appeal of creating your own. Last night was that kind of night, with grilled lemon chicken pitas. It was a good choice and so tasty! I wanted to grill, hoping to fool myself into thinking the weather is warmer than it actually is. It didn’t work though, it was still FREEZING. ❄️❄️
For the chicken, I cut chicken breasts into chunks. You can see in the photo they were kind of long, relatively thin strips. Like maybe 1 1/2 inch by 3 inches.
I feel like those thread well onto the skewers. Place chicken in ziplock bag or container, ready for next step.
The marinade I used was-
3/4 cup lemon juice
1/4 cup olive oil
2 teaspoons oregano
1/2 teaspoon salt
1 tablespoon minced garlic
1/8 teaspoon thyme
Mix marinade and add to chicken.
Let this marinate about 2 hours on the countertop. If it’s going to be longer than 3, refrigerate. Heat grill to 400 degrees. Thread meat through skewers.
Grill for about 3 minutes per side. The pieces are very thin so they grill quickly.
For our pitas we used the grilled chicken, caramelized onions, cucumbers, hummus, tomatoes, olives, chickpeas, and a splash of fresh lemon juice. These kind of meals have me feeling all the ???? -my family agrees. This spread was wiped out within minutes
