Isn’t Salmon one of the most perfect foods? Not only does it taste really good, it’s versatile, and it such an easy quick meal. I am lucky enough to have parents who live in Alaska and send me a box of filets every year. I carefully ration them out to make sure they last until the next box arrives. I’m at the tail end of my 2018 box and looking forward to the salmon run of 2019!
This is a simple and quick recipe, that’s bursting with FLAAAVOR!Preheat oven to 425 degrees Lay your filet on a parchment lined baking sheet. Lightly brush with with olive oil and sprinkle with salt and pepper.

It will bake quickly. I think mine took about 15-18 minutes.
We served it with roasted parsnips and steamed edamame. I feel like we nailed it in the super healthy meal department. Boom!
