After THREE attempts of trying to find a decent gluten free sandwich loaf, I think I finally found one I like pretty well! I mean it doesn’t taste exactly like a wheat loaf, but it’s pretty good! Here’s the recipe I’ve found so far. It’s from King Arthur Flour. The link is here . My loaf didn’t look nearly as pretty as their’s, but still decent. Plus when it’s sliced, you can’t even tell.
I tried another loaf prior to this one. It turned out….pretty terrible. It was so hard and tasted really bad. I should have gotten more photos, there are the only 2 I got. I wish you could have felt the weight on this baby….it was honestly like a brick. It was so heavy!! Gross…
Anyway, I used my homemade mix, found here .
Mix dry ingredients first
Add in milk. Mix well.
Add butter and mix this in as well.
Add eggs one at a time and mix for about 3 minutes.
Let dough rise until doubled, mine took about an hour
Shape and let it double again. I had to just press it into the pan. Just keep in mind this is more like a batter than dough, It’s really soft!
Bake at 350 degrees for about 40 minutes, until golden brown.
