Have you grilled peaches yet? Like most grilled fruits, it intensifies the sweetness and caramelizes the natural sugars. It’s delicious. The other day I had some ripe peaches I needed to use, but was debating on what to do with them. I finally decided to grill them.
Start by slicing the peaches.
Coat with a touch of olive oil.
Grill on high until the peaches are caramelized and you get grill marks. Mine weren’t as pretty as I would have liked, just because I was in a little bit of a hurry. I didn’t have time to grill as long as I prefer.
I didn’t want a dessert out of these grilled peaches though, so I sliced a baguette and toasted the slices. I topped the toast with cottage cheese,then added a grilled peach.
Last thing was a light drizzle of a white balsamic. I used a peach balsamic I bought from Olivin in Boise, they ship!
