Hey all! Here is a quick, simple and really healthy meal I think you will love. In celebration of taco Tuesday, here is my healthier version of halibut tacos. I love them with the halibut fried, but that isn’t the healthiest. I choose instead to saute them in a pan and use much less oil and no breading.
Start with your fish. If you don’t have family in Alaska who send fish to you every year (sorry to rub that in…) you can use and mild flavored fish or even shrimp. Tilapia is great, or catfish, I’ve used salmon also. My husband loves shrimp, so we have used that plenty of times. Cut it into chunks, this helps to speed up cooking time.
Heat nonstick pan with olive oil over medium high heat. Add halibut and seasoning.
Cook 2-3 minutes on first side. Flip and cook another 2-3 minutes on other side.
Don’t worry if the halibut breaks up a bit, it will be served in tacos and no one will ever notice.
As soon as the halibut is finished, start charring your corn tortillas. This only takes few minutes. If you don’t like corn, you are welcome to do flour.
We always serve ours with a lime and cilantro slaw. It’s simple and quick. I always make this prior to starting the halibut. That gives it a few minutes to marinade together. I love using purple cabbage, it’s just pretty! Slice it really thin, I used about 6 cups. Slice red onion really thin also, I used about 1/2 cup. Chop one half bunch of cilantro and add this to bowl. On top of everything, squeeze 1 lime. If you don’t have lime, lemon works as well.Now add salt and pepper to taste. If you like it spicy, add in some cayenne pepper, crushed red pepper or jalapenos. Or you can add all 3 if you are like my husband. You can also top with salsa if you feel inclined. I like a medium green salsa on mine.
- 1.5 pounds halibut
- 2 teaspoons olive oil
- 1 teaspoon minced garlic
- 2 tablespoons minced onions
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon oregano
- 1/2 teaspoon cayenne pepper
- 1/4 teaspoon paprika
- Cut halibut into 2 inch chunks. Heat nonstick pan with olive oil over medium high heat. Once the pan is good and hot add halibut. Add seasonings. Flip after about 2-3 minutes. cook on the other side 2-3 minutes. It’s okay if the halibut breaks up a little bit. Serve immediately on charred corn tortillas and topped with lime slaw.
