Healthy Pumpkin Bread

I’m pretty much a sucker for anything with pumpkin. I love the flavor so much! The only problem with most pumpkin baked goods is they are usually really high in fat and refined sugars. This recipe isn’t super healthy, but a healthier option. My boys love chocolate chips in everything, so I put plenty in their loaves. I also used the mini loaf pans for this one. I just like the look of mini loaves. 

Here’s the recipe
Preheat oven to 350°. Grease 8 mini loaf pans.
.1/4 cup melted canola oil
1/3 cup honey or maple syrup
2 eggs
1 cup pumpkin purée
1/4 cup milk of choice, I used almond milk
1/2 teaspoon cinnamon
,1/4teaspoon ground ginger,
1/4teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 teaspoon baking soda
1 teaspoon vanilla extract
1 teaspoon salt
1 ¾ cups white whole wheat. I usually prefer whole wheat pastry, but didn’t have any. Regular white wheat worked great.

Combine wet and dry in separate bowls. Once mixed well, combine together. Mix only until combined. . If using raisins, nuts or chocolate chips, add them in now. Bake until slightly underbaked. . .
It was about 120 calories per mini loaf. I didn’t check calories with chocolate chips. I take mine plain!
