Hard To Resist Lemon Crinkle Cookies

Today’s cookie was a lemon crinkle cookie. I’m a sucker for anything with citrus, I just love the tart flavor. Here’s the recipe

1 stick unsalted butter, softened
1 cup sugar
1 egg
1 tablespoon lemon zest
2 tablespoons lemon juice
1 teaspoon vanilla
1 1/2 cups plus 2 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon baking powder
1/4 teaspoon baking soda

Preheat oven to 350°. Mix flour, salt, baking soda and baking powder in separate bowl and set aside. Combine sugar and lemon zest and mix well. Anytime you are baking with zest, combine it first with the sugar. This helps to evenly distribute it through the baked goods. Next, mix butter with sugar mixture until light and fluffy. Add egg, vanilla and lemon juice. Mix to combine, but don’t over mix. Add in flour mixture and combine, remember not to overmix. Scoop cookies until powdered sugar and coat well. Bake for 10-15 minutes until edges are lightly browned.
