I’m loving this chia pudding. I know not everyone likes the texture of the chia, but I like it! This recipe was made with lite coconut milk,and layered with mango puree and toasted coconut. It was so good and totally healthy!
I started with my regular recipe for chia pudding. Using lite coconut milk, honey and chia seeds. Mix well and let it sit overnight.
The next day, make your mango puree. I added just a touch of the leftover coconut milk to ensure it was smooth. Cube mango pieces and add to food processor. Blend well, it should come pretty smooth. I added a touch of coconut milk, but it’s not necessary.
Layer the mango puree with the pudding and toasted coconut. Sit back and enjoy.
