I love all pasta, but I think orzo might be my favorite! It like, pasta, but reminds me of rice too. Plus, it’s so small it boils quickly. It makes this a really quick salad.
Start by boiling the pasta as directed on box. I used half my box. Drain and rinse with cold water. Set aside while you prep the rest of the salad.
Cut up veggies. I always try and make sure anytime I make a pasta salad to include equal amounts or more veggie to pasta ratios. For this salad, I used cucumbers, tomatoes, bell peppers, red onions and olives.
Combine the pasta, veggies and dressing.
Enjoy now, or save for later. This is a great make ahead dish!
I used this orzo salad with a meal of baked salmon and roasted squash. It was pretty amazing!

Orzo veggie salad
- 3 cups cooked orzo
- 4 cups chopped veggies of choice I used cucumbers, red onions, bell peppers, tomatoes, and olives
- 1/4 cup dressing of choice
- Cook orzo as directed. Drain, rinse with cold water and set aside.Chop veggies. Combine orzo and veggies.You can use a store bought dressing, or make one of your own. I used a homemade dressing by combining 2 tablespoons lemon white balsamic and 2 tablespoons or infused herbs de provence olive oil, a dash of salt, and 1/4 teaspoon minced garlic. This is such a delicious dressing, if you can , I recommend this! Also, I salted and peppered the salad just a touch. This is a personal preference of course!Now, sit back and enjoy. You deserve it!
