Roasted Parsnips

Tis the season for parsnips. Do you love them? Hate them? Indifferent? I think I’m on the fence, I would say I’m definitely in different. I like them okay, but don’t love them. It is a nice change from the usual veggies we have with meals though. Of course there are plenty of ways to make them, but here’s mine.

Preheat the oven to 450 degrees. Peel parsnips, just like you would a carrot. Cut into sticks, kind of like a carrot as well. If the center of the parsnips feels pretty tough, cut it out.

Lightly drizzle with olive oil and sprinkle with salt, pepper, garlic powder, italian seasoning and thyme. Layer on a baking sheet, lined with parchment paper.

Bake for at least 30 minutes until lightly brown and cooked through. There are different dipping sauces you can serve these with- spicy ketchup (srirachi sauce and ketchup), tzatsiki, hummus etc. Tell me what you think!
