Simple Blueberry Lemonade

If I turn up the heat in the house and close the blinds, I can almost pretend I’m sipping this blueberry lemonade on a warm summer day. ☀️????☀️I know it’s out of season, but I just couldn’t resist. It just felt right.

Flavored lemonades are really pretty simple, and there are tons of options. This is a stripped down version. Also, I did not squeeze the lemons, I bought frozen.

It was just so convenient. It calls for sugar, but honey works great also. Anyway, mix your lemonade and refrigerate. For this recipe I used blueberries, but the same would apply to any other berries you are craving. Cherries are also great, and you cook them the same way. Of course blueberries are out of season, so I used frozen. .

2 1/2 cups frozen blueberries
3 tablespoons honey, this is a variable. You can add more or less depending on how sweet you want it.

Heat berries and honey over medium heat. Boil for about 5 minutes.

If you don’t like chunky berries, throw them in the food processor at this point. If you prefer, you can even strain the skins out. I actually like the chunks, so I mashed with a fork and left everything in. Continue to cook berries over medium heat into they have reduced and are thickened. Add them to lemonade and chill.

Done and done. Could it get any better than this? Well, maybe an 80°day and a front porch swing. Just sayin. Here’s to the possibility that summer might actually come this year! ????????
