Sliced Cucumber Greek Salad

This is the simplest salad, probably ever.I’m not even kidding, but there is something SO delicious in it’s simplicity. Plus the cucumber ribbons are just so beautiful!! They are the most time consuming part, but worth it as beautiful as it turned out. If you don’t want to take the time to do this, just slice thinly.

Start by shaving, either on a mandolin or vegetable peeler like I did, your cucumbers. You want them fairly thin.

Curl them in the serving bowl. Sprinkle on feta cheese. Add tomatoes, if you using. This is also great with just the cucumbers. Drizzle the top with olive oil and a touch of lemon juice. I used a herb infused olive oil, and it was amazing. If you have it, garnish with fresh oregano. Sprinkle the top with salt and a generous amount of pepper.

    Hi Amy, That’s my kind of salad in the summer time, can’t get enough.

    I spent a couple weeks visiting my brother in Grand Haven, MI recently and my sister introduced me to a new ‘tourist town’ attraction: Grand Haven Vinegar and Oil. ( 616-850-0252
    We almost got drunk tasting all the different types of balsamic vinegar. It was so fun. a couple of small bottles followed me home: (of course the first two were my favorite, the third was thrown in for good measure to a new customer)
    1. Organic Garlic
    2. Red Raspberry Balsamic
    3. Dark Chocolate Balsamic (this my sister-in-law sprinkled over strawberry shortcake–WOW) Just a little put the cake into another orbit.

    Glad to see you had an opportunity to visit with almost all your family as well. I hadn’t seen my brother and his family since Dad died 8 years ago. So we had a wonderful time. T’resa and Emily joined me.

      Oh, these sound delicious Val! Our oil and vinegar shop here has some of those same flavors. It’s a game changer, isn’t it?? I have loved experimenting with all the different flavors and variations. I’ll check your shop online too. It’s always good to find new resources.
