Well, this was supposed to be a ground turkey and sweet potato chili. It doesn’t look like a chili though????. I forgot the paprika and tomato paste, and apparently it is pretty vital for the LOOK of chili, but doesn’t affect the taste because this was awesome!! Sweet potatoes are not my favorite food, but I can hardly resist anything that is going to be sweet and spicy. It was a Crock-Pot dinner, so it’s a simple throw it together and forget about it. It was exactly what I needed on such a busy day! Here’s how I made mine-
1 pound ground turkey
4 cups cubed sweet potatoes
2 cans black beans
1 can Rotel, or off brand equivalent
1 15oz can crushed tomatoes
1 tablespoon minced garlic
1 tablespoon paprika
1 tablespoon chili powder.
Mexene is my personal favorite.
1 teaspoon Cayenne pepper, less if you don’t like spicy.
1 teaspoon cumin
Salt and pepper to taste
Cook ground turkey. Add it and everything else to Crock-Pot. Cook kin low for 6 hours, or high for 4. We served ours with cornbread, of course. We also love it topped with red onions, grated sharp cheddar and avocados.
