Zest your oranges.
Mix your egg yolks, orange zest, sugar, and vanilla in a bowl
Temper your egg mixture with the heavy cream
Pour into the ramekins and cover with tin foil
Cook in the instant pot until done
Sprinkle sugar on top and caramelize with a torch or in the broiler
