Whole Wheat Sandwich Bread

I have always loved @kingarthurflour whole wheat sandwich bread recipe. It’s a straight dough method, basically you throw all the ingredients in at one time, mix, proof, shape and bake. It’s actually pretty simple. Time consuming, but simple. If you have been wary of whole wheat breads, you’ve got to give this one a try! Here’s the rundown

2 tablespoons orange juice, seems like a weird ingredient for wheat bread, but it helps to cut the tanic flavor. 
1 cup lukewarm water
4 tablespoons unsalted butter, but in 6 pieces
3 cups whole wheat flour, I used white wheat
3 tablespoons sugar, I generally omit
1/2 cup potato flakes, helped make the dough nice and tender
1/4 cup dry nonfat milk
1 1/4 teaspoon salt
2 1/2 teaspoons instant yeast.

Combine all ingredients and mix until dough is smooth and soft. It’s dry here in Idaho, so I had to add extra liquid. Let it double. Shape your loaves and preheat oven to 350°. Once lost is doubled again. Bake for 35, tent with foil after 15. I hope you love this loaf as much as I do!!
