Simple Potato Nests For Brunch

  • 4 medium red potatoes
  • 1 egg white
  • salt and pepper
  • toppings of choice


  • Preheat oven to 425 degrees.
    Spiralize your potatoes. You can also grate and create the nests this way.
    Create 4 nests with your potatoes on a baking sheet. I like to line mine with parchment paper, but you can always use pan spray if you prefer.
    Beat your egg white for about a minute until it is frothy.
    Brush the nests with the egg white mix, then brush generously with salt and pepper.
    Place in oven and bake for 10-15 minutes until the potatoes are tender and the edges are a beautiful golden brown.
    Top with scrambled eggs, fried eggs, any breakfast meat your like, sauteed veggies, cheese, salsa. Whatever! They are so versatile and so delicious!
