Easy Fresh Mango Salsa

Servings: 2.5 cups
- 2 cups diced mangos
- ¼ cup minced jalapenos If you like it milder, reduce this to 1 tablespoon, and add in ¼ cup diced bell peppers instead
- ⅓ cup minced red onion
- 2 tablespoons fresh-squeezed lime juice
- ¼ cup chopped cilantro
- 1-2 teaspoons cayenne pepper we like it spicy, so I used 2. If you are not into heat, you can leave this out or reduce it.
- salt to taste
Combine all ingredients and mix well. Taste and adjust cayenne pepper and salt as needed. This salsa can be made ahead of time, like up to 8-10 hours. Just know though, it only stays good, in the fridge in an airtight container for about 2 days at the most. It really is best eaten within 24 hours. Now, sit back and enjoy. You deserve it!
