Preheat oven to 350 degrees. Line baking sheet with parchment. This isn't necessary, but makes cleaup easier.
Add cherries to your baking sheet and sprinkle with the sugar. Mix to combine.
Place in the oven and bake for about 7-15 minutes. The cherries will release their juices and become tender.
Remove from the oven and scoop the cherries into your food processor or blender. Blend until pretty smooth. You might need to add in a little water, I added in 2 tablespoons. This will depend on the water content in your cherries.
Once the mixture has cooled, mix it with the cream soda.
Scoop ice cream into your serving glasses. I like to chill these before serving. Pour the cherry cream mixture over the ice cream. Remember to tilt your glass to the side to reduce too much foaming.
