Cherry and Cream Ice Cream Float

  • baking sheet, food processor or blender


  • 3 cups fresh cherries I love tart, but you can also use sweet if you prefer. Pit these.
  • 3-6 tablespoons granulated sugar 5-6 tablespoons for tart cherries, 2-3 for sweet cherries
  • 1 quart ice cream
  • 2 liter cream soda


  • Preheat oven to 350 degrees. Line baking sheet with parchment. This isn't necessary, but makes cleaup easier.
  • Add cherries to your baking sheet and sprinkle with the sugar. Mix to combine.
  • Place in the oven and bake for about 7-15 minutes. The cherries will release their juices and become tender.
  • Remove from the oven and scoop the cherries into your food processor or blender. Blend until pretty smooth. You might need to add in a little water, I added in 2 tablespoons. This will depend on the water content in your cherries.
  • Once the mixture has cooled, mix it with the cream soda.
  • Scoop ice cream into your serving glasses. I like to chill these before serving. Pour the cherry cream mixture over the ice cream. Remember to tilt your glass to the side to reduce too much foaming.
  • Now, sit back and enjoy. You deserve it!
