Non-Alcoholic Blueberry Mojito

Ingredients

Mint Simple Syrup

  • 1 cup granulated sugar
  • ½ cup mint leaves
  • 1 cup water

Blueberry Mojito

  • 1 ½ cup fresh blueberries
  • 1 tablespoon granulated sugar
  • ½ cup lime juice
  • 2 ½ cups sparkling water
  • lime slices for decoration
  • mint leaves for decoration
  • blueberries for decoration

Instructions

  • In a small pan add the 1 cup granulated sugar and ½ cup mint leaves.
  • Crush them with the back of a spoon until they are lightly broken up.
  • Add the water to this mix, place on the stovetop over medium heat. Mix it well and heat until the sugar is dissolved. This will only take a few minutes.
  • Allow the simple syrup to cool slightly.
  • Add the blueberries, 1 tablespoon sugar, and lime juice to a small bowl. Mash until the berries are broken up.
  • Once the simple syrup cools, start assembling.
  • Add in a few tablespoons of the blueberry mixture, about ¼ cup of simple syrup, and then the sparkling water.
  • Decorate with more fresh berries, sliced limes, and mint leaves.
  • Now, sit back and enjoy. You deserve it!
