Weight Watcher's Taco Soup

This delicious soup makes great use of those weight watcher's points for a hearty and filling meal.

  • Large stockpot


  • 1 ½-2 pounds chicken breast
  • 3 15 ounce cans drained black beans
  • 2 15 ounce cans drained corn
  • 1 10 ounce can rotel
  • 4 cups chicken or vegetable broth
  • 1 tablespoon minced garlic
  • 1 tablespoon chili powder
  • 1 tablespoon paprika
  • 2 teaspoon cumin
  • 2 teaspoons oregano
  • 1 teaspoon salt more might be needed after cooking.
  • ½ teaspoon ground black pepper
  • toppings of choice


  • Add all ingredients, except toppings, to a large stockpot. Bring to a boil over high heat, then reduce to medium once it comes to a boil.
  • Let it gently boil, stirring occasionally, for at least an hour. I like to let it go a little longer if I have time.
  • After it has been cooked, check for flavor. Add in more seasonings as needed.
  • Serve with your favorite toppings and enjoy.
