Lime Cilantro Grilled Chicken

This is a great summer grill. With it's fresh flavors and tender texture, it will quickly become a favorite.

  • 4 chicken breasts you can use thighs if you prefer!

marinade for chicken

  • ½ cup lime juice
  • ½ cup honey
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 teaspoon ground red pepper (cayenne) optional. I like a little spice, if you don't, omit.
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 tablespoons minced garlic
  • cup chopped cilantro


  • Start by mixing the marinade for the chicken. Add it to a ziplock bag or container large enough to hold the marinade and chicken. Next, place the chicken in the container and mix well. Place in fridge for at least 3 hours, up to 6.
    Pull chicken from fridge and bring to room temp. Remove from marinade and sprinkle with salt.
    Heat grill to 500 degrees. I like to cook my chicken on pretty hot temps.
    Grease grates on grill and add chicken. Grill for 3-6 minutes per side. Let chicken rest for a few minutes before cutting.
    We served ours with street corn, some fresh tomatoes and chips and salsa. It was heavenly!
