YOu are going to love this bite-sized version of the classic lemon meringue pie!
Cream of tartar
Roll the pie dough on a floured surface and cut it into circles.
Press into your mini muffin tins and prick with a fork.
Bake and remove from the pan. Let them cool before filling.
Prepare your meringue.
Fill cooled cups with your lemon curd.
Then top with your meringue and toast in the broiler or with a torch.
