Blackberry Coffee Cake Recipe

This coffee cake recipes uses either frozen or fresh blackberries, so it is good any time of year! It is a rich cake, layer of blackberry sauce, and streusel topping. 

Start by making your blackberry sauce/filling.


Cook until it is thickened, then let it cool.


Make the streusel topping.


Mix it together and place in the fridge to chill.


Start on the cake. Cream the butter and sugar. Then add in the eggs and vanilla.


Last is the dry ingredients.


Start layering the cake- the cake first, followed by the blackberry filling, then the streusel topping.


Top with the filling with the other half of the cake mixture.


Bake until it is golden brown and fully baked.
