Not only is this stuffed, which adds so much flavor, but grilled as well. Perfect for a beautiful and delicious main course.
Salt and Pepper
Caramelize your onions and set aside
Trim the fat off of the tenderloin and butterfly it.
Pat it dry and sprinkle the seasoning on the side facing up
Spread with the caramelized onion, spinach, and then dot with the goat cheese.
Now, gently roll it tightly, and tie to close
Grill over medium-high heat, making sure to cook both sides.
It takes a little time, but can be made in advance and ready to grill when it is serving time. Perfect for a small family Christmas dinner recipe.
