This soup is so simple to make and so healthy! 

It is the perfect hot bowl of soup on a busy day. It also makes great meal prep too. 

I used red lentil for my soup, but you can use whatever you like.

Add all ingredients to the crockpot.

Mix well and set to cook.

I like to top mine with a sprinkle of salt and pepper and pepitas.

I also love serving this with whole grain crackers or crusty bread.
