This healthy dark chocolate bark is loaded with popped amaranth, dried fruit, and pepitas. It is a healthier option when you are looking for a sweet treat! PLus it is so easy to make and requires only 5 ingredients!
1. Dark Chocolate

4. Nuts or Seeds
5. Coconut Oil
Amaranth is a superfood rich in antioxidants. In this recipe, we pop the amaranth, just as you would popcorn.
Add it to a hot pan and allow it to pop. This will happen in seconds, so keep an eye on it.
let the amaranth cool and get our your other add-ins.
add your dark chocolate and a touch of coconut oil to a microwave safe bowl.
Melt the chocolate.
Pour in the add-ins and mix well.
POur the chocolate mixture onto a baking sheet lined with parchment paper.
Top with the remaining amaranth, fruit, and seeds.
Let it chill in the fridge and then break it into chunks.
