These mini lemon meringue pies are the perfect pie to serve for Thanksgiving. They are bite-sized and a pie everyone will love. 

They are the perfect combination of flaky pie crust, tart lemon curd, and creamy meringue topping. 

Cut out circles of dough to fit in a mini muffin tin

1.

Place the pie circles in the mini muffin tin and let it bake.

To make the meringue, mix egg white with cream of tartar with a whisk or hand mixer.

Fill the cooled, baked mini pie shells with lemon curd.

4.

Top the filled pies with the meringue. I like to fill it to little peaks or swirls.

5.

Toast your meringue, with a kitchen torch or place the mini pies onto a baking sheet and put it in the oven to broil.

Lemon meringue pies are such a classic American pie. The combination of the flaky pie crust, tart lemon filling, and creamy meringue is perfection!!
