Cut out circles of dough to fit in a mini muffin tin
Place them in the pie dough into the tin and let it bake.
To make the meringue, mix egg white with cream of tartar with a whisk or hand mixer.
Now, fill the mini pie crusts with homemade lemon curd.
Top the filled pies with the meringue. I like to fill it to little peaks or swirls.
Toast your meringue, with a kitchen torch or place the mini pies onto a baking sheet and put it in the oven to broil.
