I love using French lentils for this recipe as they hold their shape so much better than the others.

Cook the lentils and the rice.

The potatoes and brussel sprouts are roasted, so place them on a pan and drizzle with oil and spices.

Make your avocado dressing in a small food processor, blender or even mash by hand.

Assemble your bowl.
