Add all ingredients to a large pan and set it to boil.
This will take at least 45 minutes to cook and meld the flavors.
Make sure as you cook it, that there is still plenty of juices in the pan.
Serve it on its own, or with rice.
Add more Cajun seasoning on top for extra kick.
