It is loaded with corn, jalapenos, and cheddar. It is crispy on the outside and moist on the inside. It is also easier to make than you might think! 

Start by mixing together the dry ingredients.


Grate the cheese and chop the jalapenos if you are using them.


Add the wet ingredients to the dry. Mix, but be careful not to overmix.


Pour the batter into your hot cast iron pan.


Bake until it is golden brown.


It is best served hot and with plenty of butter!
