Making healthier homemade pie dough is so much easier than you might think! In this recipe I make a 100% whole spelt pie dough and one with a blend of spelt and all-purpose.
Let me show you how I make Spelt pie dough in a food processor.
Spelt flour and all-purpose if you want to make the blend recipe.
Add your flour and salt to the food processor. Pulse once to blend. Add the chilled butter.
Pulse until the butter is broken up into pea-sized chunks. Then add in the ice water.
Mix only until it is blended and hydrated.
Divide into 2 pieces, flatten into a circle, then wrap in saran wrap and chill.
When it is chilled, it is ready to use in your favorite galette, quiche, sweet pie, etc.
