Add spelt to your food processor.
Pulse until the spelt is cracked and broken up slightly.
Add it to your pan with water and salt. Boil until tender.
Add your apples, cinnamon, maple syrup, and butter to the pan. Cook.
When the spelt is cooked, stir in the milk.
Top with the cinnamon apples, nuts, and seeds if you are using them.
