This simple-to-make vegetable barley soup is healthy and hearty! It will fill you up and warm you up!

Start by sauteing your vegetables in a little olive oil.

Add in the barley.

The broth and the seasonings. Boil until the barley is tender.

Next in are the beans. Cook for a few minutes.

Last in is the yellow squash and the spinach.

I love to top my soup with parmesan cheese.
