Preheat the oven to 375 degrees. Spray the pan with pan release or brush it with softened butter. Set the pan aside.
Combine the oats, cinnamon, baking soda, salt, and chia seeds in a bowl.
In another bowl, combine the eggs, milk, vanilla, and maple syrup. Mix really well so you don't wind up with scrambled eggs in the baked oatmeal.
Mix together the dry and wet ingredients. Last, add the blackberries and nuts (I used almonds). Mix gently and pour this into your prepared pan.
Bake for 30-35 minutes until the mixture is mostly set.
Remove. You can serve this warm or cooled.
Notes
Sweetness and flavor- Oats themselves can be a bit bland, so be sure to add something to sweeten the oats and give them a bit of flavor. Feel free to use your favorite spices and extracts.
Add some texture with shredded coconut, dried fruit, and chopped nuts.
Let it cool for a few minutes after baking so that the oatmeal can set.
Get creative with toppings- Add a drizzle of honey, nut butter, or spoonfuls of fresh fruit to the top of each serving.
Bake into oatmeal cups by using a muffin tin and reducing the cooking time to 10 minutes.
