- 6 ounces unsweetened or bitter baking chocolate, cut into chunks for easier melting
- 12 tablespoons 1 ½ sticks unsalted butter
- 5 large eggs
- 1 tablespoon vanilla extract
- 2 cups brown sugar
- ⅓ cup granulated sugar
- 1 ⅓ cups unbleached all-purpose flour
- ½ teaspoon salt
- 1 cup cocoa powder
- 2 teaspoons cinnamon
- 1 cup chocolate chips

- 2 tablespoons granulated sugar
- 2 teaspoons cinnamon
Preheat the oven to 350 degrees. Line a 9x13 pan with parchment paper for easy removal from the pan.
Melt the butter and unsweetened chocolate together until smooth; let cool slightly.
Whip the eggs in a large bowl until foamy.
Add brown sugar, granulated sugar, and vanilla; beat until thick and glossy.
Stir in the melted chocolate mixture.
Mix the flour, cocoa, cinnamon, and salt in a small bowl. Then fold into the batter.
Add the chocolate chips and gently stir to distribute.
Pour the batter into a greased or parchment-lined baking pan.
Top with the cinnamon sugar and move to the preheated oven.
Bake for 30–40 minutes, or until a toothpick comes out with a few moist crumbs. Do not overbake or the brownies will dry out.
