  • 6 ounces unsweetened or bitter baking chocolate, cut into chunks for easier melting
  • 12 tablespoons 1 ½ sticks unsalted butter
  • 5 large eggs
  • 1 tablespoon vanilla extract
  • 2 cups brown sugar
  • cup granulated sugar
  • 1 ⅓ cups unbleached all-purpose flour
  • ½ teaspoon salt
  • 1 cup cocoa powder
  • 2 teaspoons cinnamon
  • 1 cup chocolate chips

Cinnamon sugar topping

  • 2 tablespoons granulated sugar
  • 2 teaspoons cinnamon

Instructions

  • Preheat the oven to 350 degrees. Line a 9x13 pan with parchment paper for easy removal from the pan.
  • Melt the butter and unsweetened chocolate together until smooth; let cool slightly.
  • Whip the eggs in a large bowl until foamy.
  • Add brown sugar, granulated sugar, and vanilla; beat until thick and glossy.
  • Stir in the melted chocolate mixture.
  • Mix the flour, cocoa, cinnamon, and salt in a small bowl. Then fold into the batter.
  • Add the chocolate chips and gently stir to distribute.
  • Pour the batter into a greased or parchment-lined baking pan.
  • Top with the cinnamon sugar and move to the preheated oven.
  • Bake for 30–40 minutes, or until a toothpick comes out with a few moist crumbs. Do not overbake or the brownies will dry out.
