- 1 cup Cracked einkorn berries
- 4 cups water
- ½ teaspoon salt
- 1 cup milk optional
To crack this without special equipment, throw it in the food processor or blender. Pulse until it breaks into smaller pieces.
Heat the water and salt over high heat until it comes to a boil. Add the cracked einkorn and reduce the heat to medium-low, cooking over a low boil until the einkorn is almost tender. Pour in the milk and continue to cook for another 10 minutes until the einkorn is tender and the porridge is thickened.
It is ready to serve. I topped mine with frozen blueberries, nuts, a touch of heavy cream, and plenty of pure maple syrup.
