Ingredients

  • 1 cup Cracked einkorn berries
  • 4 cups water
  • ½ teaspoon salt
  • 1 cup milk optional

Instructions

  • To crack this without special equipment, throw it in the food processor or blender. Pulse until it breaks into smaller pieces.
  • Heat the water and salt over high heat until it comes to a boil. Add the cracked einkorn and reduce the heat to medium-low, cooking over a low boil until the einkorn is almost tender. Pour in the milk and continue to cook for another 10 minutes until the einkorn is tender and the porridge is thickened.
  • It is ready to serve. I topped mine with frozen blueberries, nuts, a touch of heavy cream, and plenty of pure maple syrup.
