Easy Tuscan Tortellini Salad

This quick salad is a is a tasty addition to any meal.

Ingredients

  • 20 ounce package tortellini
  • 6 cups veggies of choice I used bell peppers, mushrooms, cucumbers, and tomatoes
  • 1 cup chopped olives
  • cup chopped pepperoni
  • 1 cup fresh mozzarella or other cheese of choice. I also love a fresh mozzarella
  • salt and pepper to taste

Tuscan Dressing

  • cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 teaspoons dijon mustard
  • 2 teaspoons honey or sugar
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • ½ teaspoon minced garlic
  • salt and pepper to taste.

Instructions

  • Boil pasta as directed. Drain. Rinse with cold water, set aside.
  • Chop veggies. Combine veggies, cheese, olives, tortellini, and pepperoni in a large bowl.
  • Combine all the ingredients for the Tuscan dressing. Mix. Season with salt and pepper as needed.
  • Pour over the salad and mix carefully with a rubber spatula.
  • This salad will stay good in the fridge for about 3-4 days! Make sure and wrap tightly with saran wrap or store in tupperware.
  • Now, sit back and enjoy. You deserve it!
