Fluffy Homemade Einkorn Flatbread Recipe

Ingredients

  • 4 cups einkorn flour
  • 2 teaspoons salt
  • 2 teaspoons sugar or honey
  • 2 teaspoons instant yeast
  • 1 cups warm milk
  • cup plain yogurt
  • 4-6 tablespoons melted butter, separated 2 tablespoons for the dough, the rest for cooking

Instructions

  • Combine the dry ingredients in a medium-sized bowl and mix well. To this, add the milk, yogurt, and 2 tablespoons of butter.
  • Mix with a spatula or spoon, then turn it out onto a surface. Knead it until the flour is well incorporated. This should only take a minute, maybe 2.
  • Place it back into your bowl, cover and let it rise until it has doubled.
  • Divide the dough into 8 pieces. On a lightly floured surface, roll each dough into a circle or oval that is about ¼-inch thick. Cover and let these rest for 10-20 minutes.
  • Heat your pan or griddle over medium heat. Once it is heated, brush it with melted butter. Place as many flatbread pieces as will fit on your pan or griddle.
  • Cook them for 1-2 minutes on each side. They should be a deep brown and lightly charred on the bubbles.
  • Remove and brush with more melted butter if you want. Serve immediately.
