Halloween Popcorn Balls Recipe

Ingredients

  • 14 cups popped popcorn This can be airpopped or microwave
  • 1 10-ounce bag mini marshmallows
  • cup butter
  • ½ teaspoon vanilla
  • gel food coloring of choice
  • 1 cup Halloween sprinkles
  • ¼ cup candy eyes

Instructions

  • Pop the popcorn and remove any unpopped kernels.
    Popcorn in a large stainless steel bowl.
  • Place the popcorn in a large bowl and set it aside.
  • In a large pan, add the butter and melt over medium-low heat.

  • Add in the marshmallows and continue to cook stirring constantly. The mixture will burn quickly if not.

  • Remove from heat when the marshmallows are melted. Add in the food coloring and vanilla and mix well.

  • Pour this over the popcorn. Gently mix until the marshmallow mixture coats all the popcorn.

  • Form the popcorn balls, squeezing tightly to hold their shape.

  • While the balls are still hot, press the sprinkles and candy eyes all over each ball. If you are using candy corn or other candy, press them into the balls as well.

  • You may need to press the balls together again as they start to cool.

  • When they have cooled all the way you can package them. Wrap individually or store in an airtight container.

Notes

While packaged rice crispy treats might have a long shelf life due to all the preservatives used, the shelf life of these popcorn balls. 
These will hold well for 24 hours, and even up to 48 hours. After that, I really feel like the quality declines a bit. 
I will be the first to admit that I am pickier than most. My boys have eaten these after 3 days and felt like they were still amazing. 
So, let's just say, freshness and quality is a personal preferences too.
