Ingredients

  • 4 ½ cups einkorn flour
  • 2 ½ teaspoons active dry yeast
  • 1 ½ teaspoons salt
  • 1 ½ cups warm water
  • 3 tablespoons olive oil plus more for greasing the pan on the rise

Instructions

  • Activate the yeast. Mix the yeast with the water and let it sit at room temperature for about 10 minutes.
  • Add in the remaining ingredients and mix on medium speed for 6 minutes. This can also be kneaded by hand for 8 minutes.
  • Divide the dough into 4 pieces. Grease a 9x13 pan and place the 4 pieces in it. Cover it with plastic wrap and place it in the fridge for at least 6 hours, but preferably overnight.
  • When you are ready to bake, take out the pizza dough and bring it to room temperature. This will take at least 1-3 hours, depending on the temperature in your house.
  • When it is getting close to warm, roll out the pizza dough into 12-inchx 10-inch ovals. You can also do rounds if you prefer. Preheat the oven to 550 degrees- on convection if you have it. Place a baking sheet upside down in the oven,
  • Put each one on a parchment paper, or put 2 on each if they will fit. Top the pizzas as you like. Then, slide them onto the hot baking sheet and bake until they are golden brown and crispy.
  • Remove, slice, and serve immediately.
