- 4-6 cups vegetables I used cucumbers, tomatoes, red onions, etc.
- 8 ounces fresh mozzarella
- 1 cup halved or quartered
- ⅓ cup olive oil
- 3 tablespoons fresh lemon juice
- 2 tablespoons honey
- 2 teaspoons oregano
- 1 teaspoon minced garlic
- salt and pepper to taste
Add all your vegetables and cheese to a bowl.
Mix the ingredients for the dressing in a small bowl and drizzle over the vegetables. Mix well.
