Italian Vegetable Salad

This simple Italian vegetable salad is the perfect perfect side dish or your next meal or light dish.

Ingredients

  • 4-6 cups vegetables I used cucumbers, tomatoes, red onions, etc.
  • 8 ounces fresh mozzarella
  • 1 cup halved or quartered
  • cup olive oil
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons honey
  • 2 teaspoons oregano
  • 1 teaspoon minced garlic
  • salt and pepper to taste

Instructions

  • Add all your vegetables and cheese to a bowl.
  • Mix the ingredients for the dressing in a small bowl and drizzle over the vegetables. Mix well.
  • That is it! It is done. Sit back and enjoy!
