Oatmeal Waffle Recipe With No Flour

  • 2 ¼ cups oat flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 tablespoon granulated sugar
  • ¾ cup +2 tablespoon milk
  • 3 eggs separated
  • cup melted butter

Instructions

  • I like to heat the waffle iron while I am baking the batter. That way it is ready to go when I am.
  • Begin by mixing the flour, baking powder, salt, and sugar in a small bowl and set it aside.
  • Separate your eggs and whip the egg whites to stiff peaks.
  • In a larger bowl, add the milk and egg yolks. Mix them, then add in the dry ingredients.
  • Mix to combine. Then pour in the melted butter. Again, only mix to combine.
  • Add in the whipped egg whites, then fold gently to combine.
  • Let the batter rest for a minute or 2, then start cooking.
  • Be sure to spray the waffle iron if needed.
  • This will make 3 large waffles or 4 medium-sized waffles.

Notes

It is really important not to overmix this waffle batter. The goal is only to INCORPORATE the ingredients together, not overdo it.
If you want to make vegan oatmeal waffles, be sure to use plant-based milk and butter, and flax eggs.
