Ingredients

  • 4 cups green
  • 1 cup sliced cucumbers
  • 1-2 ripe pears- not overly ripe. Sliced or cut into chunks
  • ½ cup sliced almonds
  • ½ cup pepitas can be subbed for other nuts
  • cup feta

Cinnamon vinaigrette

  • cup olive oil
  • 1 ½ tablespoons apple cider vinegar
  • 2 teaspoons honey or granulated sugar
  • 1 teaspoon dijon mustard
  • ½ teaspoon ground cinnamon
  • salt to taste

Instructions

  • Put together your salad in the serving bowl. Make sure that if you aren't going to serve right away, you soak the pear slices in lemon water to prevent browning.
  • Mix together the vinaigrette and pour over the salad right before serving.
