Perfect rhubarb lemonade

This perfect rhubarb lemonade is just as the name suggests, perfect. It is easy to make and so refreshing on a hot summer day!

Ingredients

  • 4 cups chopped rhubarb
  • 4 cups water
  • 1 cup granulated sugar
  • 1 cup fresh lemon juice
  • Ice for serving
  • Cold water or sparkling water to taste

Instructions

  • Combine the rhubarb, water, and sugar in a large saucepan. Bring to a gentle boil over medium heat and cook for 15–20 minutes, or until the rhubarb is very soft.
  • Strain the mixture through a fine-mesh sieve, reserving the rhubarb syrup. Let cool.
  • Stir the lemon juice into the cooled rhubarb syrup.
  • Fill glasses with ice and add the rhubarb lemonade base. Top with cold water or sparkling water to your preferred strength and stir gently.

Notes

  • Fresh or frozen rhubarb both work well in this recipe.
  • Freshly squeezed lemon juice gives the best flavor.
  • The rhubarb syrup can be made up to 4 days ahead and stored in the refrigerator.
  • Adjust the amount of water or sparkling water to make the lemonade as tart or as light as you like.
