Perfect rhubarb lemonade

- 4 cups chopped rhubarb
- 4 cups water
- 1 cup granulated sugar
- 1 cup fresh lemon juice
- Ice for serving
- Cold water or sparkling water to taste
Combine the rhubarb, water, and sugar in a large saucepan. Bring to a gentle boil over medium heat and cook for 15–20 minutes, or until the rhubarb is very soft.
Strain the mixture through a fine-mesh sieve, reserving the rhubarb syrup. Let cool.
Stir the lemon juice into the cooled rhubarb syrup.
Fill glasses with ice and add the rhubarb lemonade base. Top with cold water or sparkling water to your preferred strength and stir gently.
Notes
- Fresh or frozen rhubarb both work well in this recipe.
- Freshly squeezed lemon juice gives the best flavor.
- The rhubarb syrup can be made up to 4 days ahead and stored in the refrigerator.
- Adjust the amount of water or sparkling water to make the lemonade as tart or as light as you like.
